White biotechnology utilizes microorganisms or microbial-derived enzymes to produce valuable chemicals, playing a crucial role in addressing the challenges of a growing global population and the increasing demand for fine chemicals, food additives, and pharmaceuticals. This approach offers bio-based production solutions that are independent of fossil fuels, making them more sustainable and generating less hazardous waste. The biotechnological production of proteins and peptides has gained significant importance, with the market for industrial enzymes projected to grow from approximately US$ 3.3 billion in 2010 to US$ 4.4 billion by 2015.
